I would say that, in general, “engrossing” has a slightly positive shade - “the film was engrossing” - whereas “consuming”, usually preceded by the word “time”, imparts a slightly negative quality, “that was very time consuming, I could have been doing something else instead”. “Absorbing” is also generally positive.
